Ingredients For Making Radish Pickle :

Radish : 1 kg
Mustard oil : 200 gm
Galgal Juice (Hill lemon, Kumaon lemon) : 200gm (Galgal is a citrus fruit, so add as per taste)
Cane Sugar (गुड़)/Sugar : 150 gm
Salt : 30 gm (As per your taste)
Green Chilly : 50 gm (As per taste)
Turmeric Powder : 2 tbs
Carom Seed : 3 tbs
Asafetida: 1 Pinch  or 0.5 gm

Radish SlicesProcedure of Making Mooli Ka Achar :

Wash the radish and peel off the skin. Cut them in small round pieces.  Keep them in sun for 2 days for drying.
Sqeez Galgal in a separate pan and extract juice by applying some salt on it, if you don’t add salt in Galgal juice immediately it might get bitter. Filter the juice and remove the seeds.
Heat up the mustard oil in a pan. Once it starts leaving smoke add carom seed, asafetida and turmeric powder.
Add Galgal juice, salt, Cane Sugar in the pan. Boil for 5 minutes. Then add radish and green chili flakes.
Keep stirring for 10 Minutes until the gravy starts leaving oil. Pickle is ready to taste. Store it an air tight jar and serve it with meal.
